    1 lb of fruit rinds
    1 qt. water
    1 TBS salt

    Recipe



    Select fine, smooth fruit rinds. cut into strips and put into water. Soak for 48 hours. Drain and cover with fresh water. Cook for 8 hours changing water 3 times filling up with clear, cold water.

    Measure lb. for lb. sugar and fruit, making thick syrup. Cook 1 hour covered, uncovering the last 15 minutes. Shake around until nearly evaporated. Dry for 2 days on a platter then roll in sifted powdered sugar.
