    Greek Meat Rolls in Tomato Wine Sauce

    List of Ingredients


    • 1 lb. ground beef or turkey
    • 2 slices dry toast, crumbled
    • 1 T. dried onion
    • 1/4 t. garlic powder
    • 1 egg, slightly beaten
    • 1-1/2 t. sugar
    • 1/2 t. salt
    • 1/2 t. cumin
    • 1/4 t. coarse ground pepper
    • 3 T. cold water
    • about 1/8 c. flour
    • TOMATO-WINE SAUCE:
    • 1 can (6 oz.) tomato paste
    • 2-1/2 c. water
    • 3/4 c. dry red wine
    • 1-1/2 t. salt
    • 1 t. cumin


    Instructions


    1. Mix all ingredients except flour until well-blended amd firm. With hands moistened with cold water, shape rounded tablespoons of meat into 3" long fingers. Coat rolls lightly with flour. In frying pan heat 2 T. oil til hot and brown rolls a few at a time. With slotted spoon or spatula remove to paper towels to drain. Add to tomato-wine sauce*, cover and simmer 1 hr. Serve over rice.
    2. *TOMATO-WINE SAUCE: In saucepan whisk together tomato paste, water, dry red wine, salt & cumin til smooth.

    Chef's comments: Can double meat-roll recipe and use same amount of sauce.
