    List of Ingredients


    • 1 lb. carrots (can use baby carrots also)
    • 1-1/2 T. butter or margarine
    • 1/4 c. slivered almonds
    • 1 T. sugar
    • 1/8 t. coriander
    • 1/8 t. cinnamon
    • 1/4 t. cumin
    • pinch of cayenne pepper (optional)
    • salt


    Instructions


    1. Slice peeled carrots (or use baby carrots whole) & cook in boiling water til tender. Drain.
    2. Melt butter in pot; add almonds and cook over medium-low heat, stirring until light-gold, about 3 minutes. Add carrots and remaining ingredients. Cook, stirring over low heat til carrots are glazed, about 3-5 minutes.
