    This is a nice, thick cornbread.


    List of Ingredients


    • 1-1/4 cups all-purpose flour
    • 1-1/4 cups yellow cornmeal
    • 1/3 cup sugar, or to taste
    • 2 tablespoons baking powder
    • 1 teaspoon salt
    • 1-1/4 cups milk
    • 3 large eggs
    • 1/2 cup unsalted butter, melted


    Instructions


    1. Preheat oven to 425°F. Butter well an 8" square baking pan.
    2. In a bowl, sift the flour, cornmeal, sugar, baking powder and salt.
    3. In another bowl, whisk the milk, eggs and butter.
    4. Add the liquid ingredients to the dry ingredients, stirring until just combined, and pour the mixture into the prepared pan.
    5. Bake for 25 to 30 minutes or until a cake tester inserted into the center comes out clean.
    6. Let cool in the pan on a rack for 5 minutes. Then, invert onto the rack and let cool to warm. Cut into squares and serve.
