Victoria's Cornbread

Recipe Introduction
This is a nice, thick cornbread.
List of Ingredients
- 1-1/4 cups all-purpose flour
- 1-1/4 cups yellow cornmeal
- 1/3 cup sugar, or to taste
- 2 tablespoons baking powder
- 1 teaspoon salt
- 1-1/4 cups milk
- 3 large eggs
- 1/2 cup unsalted butter, melted
Instructions
- Preheat oven to 425°F. Butter well an 8" square baking pan.
- In a bowl, sift the flour, cornmeal, sugar, baking powder and salt.
- In another bowl, whisk the milk, eggs and butter.
- Add the liquid ingredients to the dry ingredients, stirring until just combined, and pour the mixture into the prepared pan.
- Bake for 25 to 30 minutes or until a cake tester inserted into the center comes out clean.
- Let cool in the pan on a rack for 5 minutes. Then, invert onto the rack and let cool to warm. Cut into squares and serve.
