    Sausage and Egg Casserole

    Source of Recipe

Jane (Taste of Home Recipes E-Zine)

    List of Ingredients

    • 1 lb. mild pork sausage, OR 1 or 2 cups chopped ham
    • 4 slices of bread, cubed
    • 1 cup grated cheese (sharp OR Cheddar OR Colby OR Monterey Jack)
    • 6 large eggs
    • 2 cups milk

    Instructions

    1. The night before, brown sausage, drain grease and set aside. If using ham, just chop into bite-sized pieces.

    2. Grease a 9x13 in. baking dish. Arrange bread cubes in bottom of dish.

    3. Place sausage or ham on top of bread, spreading evenly.

    4. In a bowl, beat eggs and milk together. Pour over meat and bread. Cover - refrigerate overnight or use right away.

    5. Sprinkle cheese on top before baking. Bake at 350 degrees for 45 minutes, or until a knife inserted in the center comes out clean.

    6. Recipe may be doubled.

    7. NOTE: You may add onions and peppers if you like. Put them on top of the meat before adding egg/milk mixture. You may also add 1 tsp. dry mustard to the egg/milk mixture. You may substitute 2 cups plain croutons for the bread. You may also fry four slices of bacon until crisp, crumble, and sprinkle over top of casserole after baking.
