    King Ranch Chicken Casserole

    List of Ingredients


    • 2-1/2 to 3 lb. chicken
    • 1 medium onion, finely chopped
    • 1 can cream of mushroom soup
    • 1 can cream of chicken soup
    • 1 can Rotel® tomatoes with green chilies
    • 1 cup chicken stock (broth)
    • 1 dozen corn tortillas, cut in 1-inch squares
    • 1 cup grated Cheddar cheese (I use more - cheese is good!)


    Instructions


    1. Wash and cut up chicken, put in large pot, cover with water and boil until tender.

    2. Cool chicken, remove meat from bone, and cut into bite-sized pieces.

    3. In deep casserole dish, place in layers: tortillas, onion, chicken and cheese. Repeat layers until all ingredients are used.

    4. In a bowl, mix together chicken stock/broth, soup and Rotel® tomatoes.

    5. Pour over casserole; top with additional grated cheese.

    6. Bake uncovered at 350°F for one hour.
