King Ranch Chicken Casserole

List of Ingredients
- 2-1/2 to 3 lb. chicken
- 1 medium onion, finely chopped
- 1 can cream of mushroom soup
- 1 can cream of chicken soup
- 1 can Rotel® tomatoes with green chilies
- 1 cup chicken stock (broth)
- 1 dozen corn tortillas, cut in 1-inch squares
- 1 cup grated Cheddar cheese (I use more - cheese is good!)
Instructions
- Wash and cut up chicken, put in large pot, cover with water and boil until tender.
- Cool chicken, remove meat from bone, and cut into bite-sized pieces.
- In deep casserole dish, place in layers: tortillas, onion, chicken and cheese. Repeat layers until all ingredients are used.
- In a bowl, mix together chicken stock/broth, soup and Rotel® tomatoes.
- Pour over casserole; top with additional grated cheese.
- Bake uncovered at 350°F for one hour.
