Mexican Beef Casserole

List of Ingredients
- 1-1/2 lbs. ground beef, browned and drained
- 2 pkgs. Lawry's® Taco Seasoning mix
- 1 large onion, chopped
- 1 can pinto beans, drained
- 1 can Rotel® diced tomatoes
- 1 can cream of chicken soup
- 10-12 corn tortillas
- 1 lb. Monterey Jack cheese, grated
- 4 oz. Cheddar cheese, grated
Instructions
- Mix taco seasoning with browned ground beef, according to package directions.
- In a small bowl, mix Cheddar cheese with a handful of the Monterey Jack cheese and all the onions. Set aside.
- Mix beans and meat mixture together.
- Mix Rotel® tomatoes and cream of chicken soup together in a small bowl.
- Line a 13x9 or 2-quart casserole dish with tortillas. Layer with meat and cheese/onion mixture. Finish with corn tortillas.
- Spread soup and tomato mixture over tortillas. Top with Monterey Jack cheese.
- Cover with foil and bake at 375 degrees for 45 minutes. Let stand about 5 minutes before serving.
