    Recipe Introduction


    A quick and easy "enchilada" type casserole without stuffing the tortillas!


    List of Ingredients


    • 1 to 3 lbs. of chicken, cooked and shredded
    • 1 cup chopped onions
    • 2 4-oz. cans mild green chilies
    • 2 tablespoons oil
    • 1 12-oz. can enchilada sauce
    • 1 cup chicken broth
    • 1 cup sour cream
    • 2 cups grated Monterey Jack cheese
    • 12 corn tortillas
    • 1 cup grated Cheddar cheese


    Instructions


    1. Saute onions and chilies in oil until soft.
    2. Add sour cream, broth, Monterey Jack cheese and enchilada sauce. (Stir until cheese is melted).
    3. Add chicken.
    4. Grease a 3-quart casserole dish. Put a layer of tortillas in the bottom of the dish.

    5. Spoon chicken mixture over tortillas. Sprinkle Cheddar cheese over chicken mixture.
    6. Continue layers (tortillas, chicken mixture, Cheddar cheese). Top with Cheddar cheese.
    7. Bake uncovered at 300 degrees until bubbly.
