    List of Ingredients


    • 1 lb. ground beef
    • 3 cups Cheddar cheese, grated
    • One 4-1/2 oz. can olives, chopped
    • 1 onion, chopped
    • 10 Mission® corn tortillas
    • Two 10-oz. cans enchilada sauce


    Instructions


    1. Brown ground beef; drain. Set aside some olives for garnish.
    2. In a large bowl, combined chopped onion, remainder of olives, 2-1/2 cups grated Cheddar cheese and 1 can enchilada sauce. Add the cooked ground beef.
    3. Cover the bottom of a 9"x13" pan with 5 tortillas. Spoon meat mixture over tortillas. Place remaining 5 tortillas on top of meat mixture.
    4. Pour the second can of enchilada sauce over the top layer of tortillas and top with the remaining Cheddar cheese.
    5. Bake, uncovered, at 350º for 20 minutes. Garnish with reserved olives.
