    Mexican Beef Casserole

    List of Ingredients


    • 1-1/2 lbs. ground beef, browned and drained
    • 2 pkgs. Lawry's® Taco Seasoning mix
    • 1 large onion, chopped
    • 1 can pinto beans, drained
    • 1 can Rotel® diced tomatoes
    • 1 can cream of chicken soup
    • 10-12 corn tortillas
    • 1 lb. Monterey Jack cheese, grated
    • 4 oz. Cheddar cheese, grated


    Instructions


    1. Mix taco seasoning with browned ground beef, according to package directions.

    2. In a small bowl, mix Cheddar cheese with a handful of the Monterey Jack cheese and all the onions. Set aside.

    3. Mix beans and meat mixture together.

    4. Mix Rotel® tomatoes and cream of chicken soup together in a small bowl.

    5. Line a 13x9 or 2-quart casserole dish with tortillas. Layer with meat and cheese/onion mixture. Finish with corn tortillas.

    6. Spread soup and tomato mixture over tortillas. Top with Monterey Jack cheese.

    7. Cover with foil and bake at 375 degrees for 45 minutes. Let stand about 5 minutes before serving.
