Zucchini Bites
Zucchini Bites
3 cups thinly sliced zucchini (about 4 small)
1 cup Bisquick baking mix
1/2 cup grated parmesan cheese
1/2 cup finely chopped onion
2 tbsp. chopped fresh parsely
1/2 tsp. salt
1/2 tsp. oregano
1/2 tsp. seasoned salt (Morton's Natures's Season-seasoning blend)
1/2 tsp. basil or marjoram
1 clove garlic, finely chopped
1/2 cup vegetable oil
4 eggs, slightly beaten ( or use an egg substitute)
Mix all ingredients and spread in a 9x13 greased pan. Bake at 350 degrees until golden brown, about 25 minutes. Cut into 2x1 rectangles. Refrigerate any remaining appetizers. Makes 4 dozen. May eat warm , or
cold or may be frozen earlier if you wish to make ahead.
