This is quick and easy to make. You can use fresh or frozen rhubarb with good results from either.
List of Ingredients
5 C. rhubarb-cut up
1 C. sugar
1 reg. box strawberry or raspberry flavored jello
2 C. small marshmallows or 20 big ones cut up
1 box white cake mix
Recipe
Place rhubarb in bottom of greased 9x13 pan. Sprinkle with sugar, then with the dry jello. Top that with the marshmallows. Cover all with the cake mix that has been prepared according to the directions on the box. Bake at 350º for 50 minutes to 1 hour. Test with toothpick.
