Sweet and Sour Pork Chops
This is another of my recipes that we really like. The chops are full of flavor and very tender.
20 oz. can pineapple chunks, drained, reserve juice
1 C. ketchup
1 T. brown sugar
1 T. vinegar
4 Medium carrots, sliced on the slant
1/2 green pepper-- chunks
4 pork chops
2 T. oil
Cook pineapple juice, ketchup, brown sugar, and vinegar in med. saucepan for 5 minutes. Add carrots, pineapple, and green pepper. Remove from heat. Brown chops in oil in skillet. Arrange chops in single layer in shallow baking dish. Spread pineapple -vegetable mixture over top. Cover w/ foil and bake at 350º for 1 hour or until chops are tender and veggies crisp tender. Serve over/with hot rice
