    Zucc. and Beef Lasagna w/ Bisquick


    1 lb. ground beef
    3 or 4 small zucchini, cut
    into 1/4-inch slices
    1/4 c. Bisquick or like mix
    1 (15 1/2 oz.) jar spaghetti
    sauce
    1 c. Bisquick
    1 c. creamed cottage cheese
    1 egg
    1/2 c. Parmesan cheese

    Preheat oven to 350 degrees. Grease square baking dish, 8 x
    8
    x 2-inches. Cook and stir ground beef in a 10-inch skillet
    until brown; drain. Place zucchini slices in single layer in
    baking dish. Sprinkle with 1/4 cup Bisquick; top with beef
    and
    spaghetti sauce. Mix 1 cup Bisquick mix, cottage cheese
    and
    egg until soft dough forms. Spread over sauce. Sprinkle with
    Parmesan cheese. Bake, uncovered, until hot and bubbly,
    about
    30 minutes. Cool 10 minutes. Serves 6.
