    I love Lo Mein but it can be soo high in points! Here is a healthy alternative without losing any of the flavor


    List of Ingredients


    • 1 c. plus 2 T chicken broth
    • 2 cloves garlic minced
    • 1/4 c. sliced scallions
    • 2 tsp grated fresh ginger
    • 2 carrots peeled and cut into into 1/4 in slices
    • 3 celery stalks cut into 1/4 " slices
    • 1/2 c. mushrooms
    • 1 1/2 c. broccoli
    • 2 T dry sherry
    • 1 T light soy sauce
    • 1/2 lbs cooked thin spaghetti (whole wheat if you want to make this core)


    Instructions


    1. In a large skillet or wok, heat 2 T broth add garlic, scallions,and ginger stir fry for 30 seconds
    2. Add carrots, celery and mushrooms and stir fry for5 minutes
    3. Add broccoli and 1/2 c. broth cover and steam for 5 min
    4. In small bowl mix remaining broth, sherry and soy sauce
    5. Remove cover and cook 1more min.
    6. Toss in cooked noodles and mix well


    Final Comments


    8 servings 1 cup Totally core if made with whole wheat pasta 90 calories/1 g fat/3 g fiber 1pt per serving
