    These bars are so good.


    List of Ingredients


    • 1 cup softened butter - no substitutions
    • 2 1/2 c flour, divided
    • 1/2 c powdered sugar, plus more for dusting the top
    • 2 c sugar
    • 1/2 c lemon juice (about 2-3 lemons)
    • 4 eggs
    • grated zest from 1 lemon


    Instructions


    1. Preheat ove to 350°F. Spray a 9x13 inch pan.
    2. Beat the butter in a large mixing bowl, then beat in 2 1/4 cups of flour and 1/2 cup powdered sugar, scraping the sides of the bowl, until a soft dough forms.
    3. Press the dough into the bottom only of prepared pan. Bake for 20 to 25 minutes until the crust is lightly browned.
    4. While the crust is baking, in a smaller bowl beat together the granulated sugar, lemon juice and remaining 1/4 cup flour, eggs and lemon zest; beat until the mixture is well combined. Pour lemon mixture over the hot crust and return the pan to the oven. Bake an additional 18 to 20 minutes or until the filling is set.
    5. Cool the pan on a wire rack. When the pan is cool, sift powdered sugar over the filling. Cut into bars.
    6. Makes 32 bars.
