    Baked Chicken and Goat Cheese Appetizers

    List of Ingredients


    • 2 tablespoons unsalted butter
    • 1 1/2 pounds chicken strips (for tenders), cleaned, trimmed of fat and pounded to 1/4-inch thickness
    • salt and freshly ground pepper to taste
    • 1 12-ounce package of goat cheese
    • 1 cup flour
    • 2 eggs, beaten
    • 1 cup plain breadcrumbs
    • 1/4 cup dried rosemary
    • 1 tablespoon dried thyme
    • 1/4 cup dried basil
    • 3/4 cup white wine


    Instructions


    1. Preheat oven to 350 degrees.
    2. Melt butter and brush both sides of chicken lightly with it. Sprinkle with salt and pepper. Spread 1 to 2 tablespoons of goat cheese onto each chicken strip. Roll up and fasten with toothpicks.
    3. Organize 3 dishes: one for the flour, one for the eggs, and one for the breadcrumbs combined with the spices. Roll the chicken roll-ups in flour first, dip in eggs, and then roll in breadcrumb mixture.
    4. Arrange in a greased baking dish, and sprinkle any left over breadcrumbs on top. Bake for 25 minutes. Pour wine over entire dish and bake for another 5-10 minutes.
