    Basil Pesto Ricotta Spread

    Serve with crudite or on bread.


    List of Ingredients


    • 2 cups fresh basil leaves
    • 2 large cloves roasted garlic
    • 1/2 cup Grated Parmesan cheese
    • 1/4 cup pine nuts or almonds (optional)
    • 1/2 cup olive oil
    • 15 oz Ricotta
    • Salt & Fresh ground pepper


    Instructions


    1. Combine basil, garlic, nuts and Parmesan in a food processor and mix. With the processor running, slowly add olive oil. Process to desired consistency.
    2. Blend in ricotta. Season to taste with salt and pepper.
