    • 1/2 cup flour
    • 1/2 cup cornmeal
    • 1/2 tsp baking powder
    • 1/2 tsp baking soda
    • 1 cup cooked beans, roughtly chopped (black turtle beans, Anasazi beans, or pintos)
    • 1/2 cup coarsely grated hot pepper Monterey Jack cheese
    • 2 T chopped cilantro
    • 1/2 tsp salt
    • 4 green onions, thinly sliced
    • 1/2 cup diced red bell pepper
    • 2 eggs, separated
    • 1/2 cup buttermilk


    Instructions


    1. Heat a griddle to medium hot.
    2. In a medium bowl, combine flour, cornmeal, baking powder, baking soda, beans, cheese, cilantro, salt, onions and bell pepper.
    3. Beat the egg yolks and buttermilk in a small bowl and add to dry ingredients.
    4. In a separate bowl beat the egg whites until stiff. Fold into bean mixture.
    5. Brush the griddle with a thin film of oil. Drop the batter onto the pan. Flatten slightly to make a 4" cake. Fry until golden brown on the bottom. Flip over and brown the other side.
    6. Serve with salsa and sour cream.


    Final Comments


    Yields: 4 servings for lunch; or 8 to 10 appetizer servings
