    Bean Quesadillas

    Easy and yummy!


    List of Ingredients


    • 2 to 4 T olive oil
    • 1 medium onion, diced
    • 2 to 3 cloves garlic, minced
    • 1 (15 oz) can black beans
    • 1 green or red bell pepper, diced
    • 2 tomatoes, diced
    • 1/2 (10 oz) box frozen corn
    • 1 (12 count) pkg tortillas
    • shredded Cheddar cheese to taste


    Instructions


    1. In a large skillet, saute 1 T oil, onions and garlic until soft. Mix in beans, bell peppers, tomatoes and corn; cook until heated through.
    2. Place a tortilla on a plate or flat surface, sprinkle cheese (to taste) over the tortilla. Spoon the bean and vegetable mixture over the cheese. Top with another tortilla. Repeat until all of the tortillas are used.
    3. Heat oil in a large skillet over medium-high heat. Place quesadillas in the skillet and heat and flip until both sides are browned.


    Final Comments


    Makes 4 servings.

    NOTE: You could add or substitute any vegetables that you'd like. Serve with sour cream and rice.
