    List of Ingredients


    • 1 (15-1/2 oz) can black-eyed peas, undrained
    • 2 large tomatoes, chopped
    • 1 (4 oz) can chopped green chilies
    • 2 green onions, chopped
    • 2 fresh jalapeno peppers, chopped
    • 3 T olive oil
    • 1 T white wine vinegar
    • 1 clove garlic, minced
    • salt and pepper to taste


    Instructions


    1. Combine black-eyed peas, tomatoes, green chilies, green onions, jalapeno peppers, olive oil, vinegar and garlic. Season with salt and pepper.
    2. Cover and chill at least 8 hours.
    3. Serve with tortilla chips.

    Makes about 3 cups
