    Bruschetta with Tomatoes and Basil

    List of Ingredients


    • 8 ripe plum tomatoes, chopped
    • 3/4 cup chopped fresh basil
    • 1 large clove garlic, finely chopped
    • 2 Tbsp olive oil
    • 1 loaf sourdough bread or baguette


    Instructions


    1. Preheat oven to BROIL, or grill on HIGH.
    2. Combine tomatoes, basil, garlic, and olive oil in bowl; season to taste with salt and pepper.

    3. Slice bread 1/2 - 3/4 inch thick; broil or grill on both sides until lightly toasted.

    4. Spoon tomato mixture, along with juices, on top of bread.


    Final Comments


    SERVES 30 -40

    Option(s):
    Sprinkle with grated Parmesan or Asiago cheese. Broil to just melt cheeses, about 1 min. Serve immediately.
