    Cheddar and Black Bean Fritters


    List of Ingredients


    • 1/2 cup yellow cornmeal
    • 1/4 cup flour
    • 1/4 tsp double-acting baking powder
    • 1/4 tsp cayenne
    • 1/4 tsp salt
    • 1/2 tsp ground cumin
    • 1/3 cup milk
    • 1 large egg yolk
    • 1 cup 1/4" diced extra-sharp Cheddar
    • 1 cup canned black beans, rinsed well, drained, & patted dry between layers of paper towels
    • 2 large egg whites
    • vegetable oil for frying the fritters
    • sour cream and salsa, if desired


    Instructions


    1. In bowl whisk together well cornmeal, flour, baking powder, cayenne, salt, and cumin; whisk in milk and yolk, and stir in Cheddar and beans.
    2. In another bowl beat whites until they hold soft peaks and fold them into Cheddar mixture thoroughly.
    3. Heat 1/8" of oil in well-seasoned cast-iron or non-stick skillet over moderately high heat until it is hot but not smoking. Working in batches, drop heaping T of batter into skillet, spreading slightly, fry the fritters for 1 minute on each side, or until golden brown, and let drain on paper towels.
    4. Serve fritters with sour cream and tomato salsa.


    Final Comments


    Makes about 18 fritters.
