    This dip uses hummus, a delicious, creamy mixture of blended chickpeas, garlic, and tahini (sesame seed paste) as its base.


    List of Ingredients


    • 1 (6 oz) carton plain yogurt
    • 1/2 cup finely chopped unpeeled cucumber
    • 1 T finely chopped red onion
    • 1 tsp snipped fresh mint
    • 1 (10 oz) container plain hummus
    • 1/2 cup chopped seeded tomato
    • 1/2 cup crumbled feta cheese
    • 3 large white and/or wheat pita rounds*


    Instructions


    1. Stir together yogurt, 1/4 cup of the cucumber, onion, and mint in a small mixing bowl. Set aside.
    2. Spread hummus in the bottom of a 10-inch quiche dish or 9-inch pie plate. spread yogurt mixture over hummus. Sprinkle with tomato, 1/4 cup cucumber, and feta cheese. Split each pita bread round in half horizontally; cut each half into eight wedges. Serve pita bread wedges with dip.


    Final Comments


    Makes 10 servings

    *For crisper pita bread dippers, halve pita rounds and cut into wedges as above. Spread wedges in a single layer on baking sheets. Bake in a 350 degree oven for 10 minutes or until crisp. Cool; cover and store in a cool, dry place.
