    • 1 1/2 pints large green olives, pitted
    • 2 cloves garlic
    • 2 red chiles
    • 3 to 4 tsp chopped fresh dill or dill seeds
    • 2 bay leaves
    • 5 T good-quality olive oil
    • 5 T white wine vinegar


    Instructions


    1. Drain the olives and put them in a clean jar. Add spices, oil and vinegar.
    2. Allow to marinate 2 days. Keep refrigerated.


    Final Comments


    Makes 3 cups.
