    Stuffed Crimini Mushrooms

    • 15 oz Part Skim Ricotta Cheese
    • 3 oz basil pesto
    • 1 oz fresh lemon juice
    • Salt and Pepper
    • 45 Crimini mushrooms with stems removed


    Instructions


    1. Preheat oven to 375°F.
    2. Place Ricotta Cheese and pesto in a food processor or mixing bowl. Add lemon juice and season to taste. Mix until smooth. Spoon the Ricotta mixture into the cavity of the mushroom.
    3. Bake for 5-8 minutes. Serve immediately.
