    "Good for You" Turkey Nachos

    List of Ingredients


    • 3 T lime juice
    • 2 T olive oil
    • 1 tsp ground cumin
    • 1 tsp garlic powder
    • 2 cups cooked ground turkey or turkey breast, coarsely chopped
    • salt and pepper, to taste
    • 1 (10 oz) pkg large tortilla chips, white, yellow or blue
    • 16 fluid oz fat-free refried beans
    • 2 cups reduced fat shredded Monterey Jack or Cheddar cheese
    • 2 cups salsa
    • fat-free sour cream


    Instructions


    1. Preheat oven to 425 degrees.
    2. Whisk together lime juice, olive oil, cumin and garlic powder; toss with turkey in a small bowl and season with salt and pepper.
    3. Make a layer of tortilla chips to cover the bottom of a large 12" to 14" round or oval baking dish. Evenly spoon refried beans over chips. Top with turkey and sprinkle with 1 cup shredded cheese.
    4. Make another layer of tortilla chips. Spoon half the salsa evenly over chips. Top with remaining cup of cheese.
    5. Bake nachos 15-20 minutes or until heated through and cheese melts and begins to bubble.
    6. Serve hot with remaining salsa and sour cream, if desired.


    Final Comments


    Yield: 10 servings

    For serving: For a casual, but fun look, bake nachos in a large skillet and serve in skillet with a colorful napkin tied on the handle.
