    Recipe Introduction


    The vibrant red flesh of the prickly pears lend this limeade its distinctive color. You'll find them at Mexican markets or specialty produce stores. Refreshing with a melon-like aroma, they combine with sweet and tart key limes for a cooling summertime drink.


    List of Ingredients


    • 1 cup prickly pear juice*
    • 1/2 cup fresh key lime juice
    • 1/2 cup sugar
    • 2 cups sparkling water, chilled
    • 1 lime, cut in wedges


    Instructions


    1. Place prickly pear juice, lime juice, and sugar in a jar with a tight-fitting lid and shake vigorously to dissolve the sugar. Pour over ice into 4 tall glasses and top off with sparkling water. Garnish with lime wedges and serve immediately.


    Final Comments


    *To peel a prickly pear, hold in place with the tines of a fork while you slice off each end with a sharp knife. Cut a lengthwise slit down the fruit and peel skin off of flesh in a rolling motion. Juice and strain through a fine sieve (to eliminate seeds) before proceeding with recipe.
