    Blueberry Scones

    List of Ingredients


    • 2 cups self-rising flour
    • 2 tablespoons sugar
    • 1/4 cup butter or margarine, cut into small pieces
    • 1 cup dried blueberries
    • 1/2 cup chopped pecans
    • 1/2 teaspoon grated lemon rind
    • 2/3 cup buttermilk
    • 1 egg


    Instructions


    1. Preheat oven to 425°F. Spray a baking sheet with non-stick vegetable spray.

    2. In a large mixing bowl combine flour and sugar; cut in butter until mixture resembles coarse bread crumbs. Stir in blueberries, nuts, and lemon rind.

    3. In a small bowl, combine buttermilk and egg; beat until blended. Stir into flour mixture until dough forms. Turn out onto a lightly floured board; knead 5 times. Roll out into an 8-inch circle; place on prepared baking sheet. With a sharp knife, score into 8 wedges.

    4. Bake for 15 minutes or until golden brown. Cool on a wire rack.
