    Bear Moon Oatmeal Bread

    • 2 cups cooked oatmeal, cooled*
    • 2 2/3 tsp salt
    • 1 1/3 tsp instant yeast
    • 1/2 cup lukewarm water
    • 2 2/3 T honey
    • 2 2/3 T canola oil
    • 5 cups white bread flour
    • egg wash (1 egg mixed with 2 T water)
    • uncooked oats, for sprinkling on top of loaf


    Instructions


    1. Mix together cooked cooled oatmeal, salt, instant bread yeast, water, honey and oil. Add in the bread flour. Mix with a dough hook in heavy-duty mixer, adding flour if necessary to allow dough to clean the sides. Knead with mixer for about 10 minutes. Place in a lightly oiled bowl.
    2. Let rise about 1 1/2 hours, then fold the dough down for one more rise to develop gluten. Seperate into 2 lb pieces and form into loaves. Place in large loaf pans and let rise until doubled, about 45 minutes. Brush with egg wash and sprinkle with oatmeal. Bake in preheated 350 degree oven approximately 40 minutes. The best way to tell if the bread is done is to use an instant read food thermometer - bread should be between 190 and 200 degrees.


    Final Comments


    *Use old-fashioned, organic oatmeal. Quick oats is too gummy.
