    • CRISCO No-Stick Cooking Spray
    • 2 cups all-purpose flour
    • 2/3 cup granulated sugar
    • 2 -1/2 teaspoon baking powder
    • 1/4 teaspoon baking soda
    • 1/2 teaspoon salt
    • 1/2 cup milk
    • Zest and 1/2 cup juice from a fresh orange
    • 1/2 cup CRISCO Oil
    • 2 eggs
    • 1 package (3.53 ounces) dried cranberries (about 2/3 cup)
    • Topping:
    • 1/2 teaspoon sugar mixed with 1/2 teaspoon cinnamon


    Instructions


    1. Heat oven to 400ºF. Spray 12 medium (about 2-1/2-inch) muffin cups with Crisco No Stick Cooking Spray.
    2. In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, and salt; set aside. In another medium bowl, whisk the milk, orange juice, zest, Crisco Oil and eggs until smooth. Add the dry ingredients and mix until just blended - do not over mix. Add the cranberries and stir just until evenly blended.
    3. Spoon batter into the prepared tins; sprinkle with cinnamon sugar topping. Bake until a toothpick inserted into the center comes out clean, about 15-20 minutes. Cool in tins on a baking rack for 5 minutes then remove.
