    List of Ingredients


    • 2 cups yellow cornmeal
    • 1 tablespoon sugar
    • 2 teaspoons baking powder
    • 1 teaspoon salt
    • 2 cups buttermilk
    • 3 tablespoons vegetable oil
    • 2 eggs, slightly beaten
    • Vegetable cooking spray


    Instructions


    1. Heat griddle or large skillet over medium-high heat. Combine cornmeal, sugar, baking powder and salt in a large bowl; make a well in center of mixture. Combine milk, oil and eggs; stir well. Add to dry ingredients, stirring just until moistened.
    2. Spray griddle with cooking spray. Spoon 2 tablespoons of batter onto pre-heated griddle. Cook until tops of cakes are covered with bubbles and edges appear slightly dry. Flip cakes and continue cooking until bottom sides are browned.
    3. Serve with butter, if desired.
