    List of Ingredients


    • 1 2/3 cups all-purpose flour
    • 3/4 cup quick-cooking rolled oats
    • 1 tsp baking powder
    • 1/2 tsp baking soda
    • 1/4 tsp salt
    • 3 T margarine or butter
    • 1 beaten egg
    • 2/3 cup buttermilk
    • 1 beaten egg


    Instructions


    1. Grease a baking sheet; set aside.
    2. In a large mixing bowl stir together flour, oats, baking powder, baking soda, and salt.
    3. Using a pastry blender, cut in margarine or butter till mixture resembles coarse crumbs.
    4. Make a well in center of the dry mixture. Stir together one beaten egg and buttermilk, then add mixture all at once to the dry mixture. Using a fork, stir just till moistened. (Dough will be sticky.)
    5. Turn the dough out onto a well-floured surface. Quickly knead dough by gently folding and pressing dough for 10 to 12 strokes or till dough is nearly smooth.
    6. On the prepared baking sheet, shape dough into a 6-inch-round loaf. On the top of the loaf, cut a 4-inch cross, 1/4 inch deep. Brush with the one remaining beaten egg.
    7. Bake in a 375 oven about 35 minutes or till done. Remove from baking sheet and serve warm.

    Makes 1 loaf

    Raisin-Oatmeal Soda Bread: Prepare Oatmeal Soda Bread as directed above, except stir 2 T brown sugar and, if desired, 1 tsp ground cinnamon into the dry mixture. Stir 1/3 cup raisins, dried currants, or snipped dried apricots into the buttermilk mixture.
