    List of Ingredients


    • 2 cups pumpkin puree
    • 3 cups granulated sugar
    • 1 cup buttermilk
    • 1 cup vegetable oil
    • 4 whole eggs
    • 3 cups all-purpose flour
    • 2 tsp baking soda
    • 1 tsp baking powder
    • 2 tsps cinnamon
    • 2 tsp ground ginger
    • 1/2 ground tsp nutmeg
    • 3/4 tsp ground cloves
    • 1 tsp salt
    • 1 cup finely chopped pecans, toasted and cooled
    • 1 cup dried cranberries (Craisins)


    Instructions


    1. Preheat oven to 350 degrees. Generously grease miniature muffin pan.
    2. Mix together the pumpkin and sugar. Stir in the oil and buttermilk. Beat the eggs lightly and add to the mixture.
    3. Mix together flour, soda, baking powder, spices and salt. Add to the pumpkin mix and stir in until just moistened. Stir in the pecans and cranberries.
    4. Scoop in muffin pan. Bake about 20 to 25 minutes.
