    List of Ingredients


    • 1 1/3 cups flour
    • 3/4 cup buckwheat or whole wheat flour
    • 1/3 cup sugar
    • 1 1/2 tsps baking powder
    • 1 tsp ground cinnamon
    • 1/2 tsp baking soda
    • 1/2 tsp salt
    • 2 slightly beaten eggs
    • 1 cup canned pumpkin
    • 1/2 cup fat-free milk
    • 1/2 tsp finely shredded orange peel
    • 1/4 cup orange juice
    • 2 T cooking oil


    Instructions


    1. Grease twelve 2 1/2" muffin cups; set aside. In a medium bowl combine flour, buckwheat flour, sugar, baking powder, cinnamon, baking soda, and salt. Set aside.
    2. In another medium bowl combine eggs, pumpkin, milk, orange peel, orange juice, and oil. Add all at once to flour mixture; stir just until moistened (batter should be lumpy).
    3. Spoon batter into prepared muffin cups. Bake in a 400 degree oven for 1 to 20 minutes or until muffins are light brown. Cool in muffin cups on a wire rack for 5 minutes. Remove from muffin cups. Serve warm.
