    Recipe Introduction


    A moist, sweet bread that is a great with any soup or salad.


    List of Ingredients


    • 3 eggs (or 2 eggs & 2 egg whites)
    • 2 cups sugar (can use less)
    • 1/3 cup oil (or 1/3 cup unsweetened applesauce)
    • 2 cup Stonyfield lowfat plain yogurt
    • 2 teaspoons cinnamon
    • 2 cups grated zucchini (or 1 cup zucchini & 1 cup carrots, shredded)
    • 3 teaspoons vanilla
    • 3 cups flour (I use whole wheat pastry flour)
    • 1 teaspoon salt
    • 1 teaspoon baking soda
    • 1/2 teaspoon baking powder


    Instructions


    1. Preheat oven to 400°F.
    2. Beat eggs until foamy, add sugar, oil, yogurt, cinnamon, zucchini and vanilla and mix well
    3. In a separate bowl sift together flour, salt, baking soda and baking powder.
    4. Add dry ingredients slowly to the yogurt mixture and mix until moist.
    5. Pour into 2 greased and floured loaf pans. Bake for 35-40 minutes.
    6. Loaves should be golden brown on top. Makes two loaves, with 12 slices each.

    Yields: 2 loaves
