    Blue Cornmeal Pine Nut Pancakes

    List of Ingredients


    • 1 1/4 cups pine nuts
    • 1 cup flour
    • 1/2 cup blue cornmeal (or yellow or white-stone ground cornmeal)
    • 2 tablespoons sugar
    • 1 teaspoon baking powder
    • 3/4 teaspoon salt
    • 2 large eggs
    • 1 cup buttermilk
    • 2 tablespoons unsalted butter, melted
    • Vegetable oil for frying
    • Maple syrup, warmed


    Instructions


    1. Heat skillet over medium-low heat and stir-fry pine nuts for a few minutes to brown slightly and release their flavor. They burn easily, so shake them as they cook.

    2. Put 3/4 cup of the pine nuts in food processor along with flour,cornmeal, sugar, baking powder and salt. Pulse just to blend. Remove to a bowl.

    3. Beat together eggs, buttermilk and melted butter in a separate bowl. Stir buttermilk mixture into dry ingredients and add remaining pine nuts. Let batter sit for a half hour.


    4. Heat griddle over medium heat. Pour enough oil onto griddle to coat surface. Pour about 1/3 cup batter into pan for each pancake, leaving space between. Cook pancakes until bubbles form on top surface, 1-2
      minutes. Flip and cook another minute or so or until bottoms are golden. Serve with warm maple syrup.
