    Double Cream Cheese Ripple Coffee Cake

    Recipe Introduction


    This cake has a dense, melting texture that is reminiscent of a pound cake. It is best baked in three 8 x 4-inch loaf pans (freeze two or give away). With a tube or Bundt pan, you get a cake that will easily serve 18 (this is a rich cake). You can top it with strawberries and whipped cream for a decadent shortcake.


    List of Ingredients


    • Filling:
    • 1 (8 oz) pkg cream cheese, softened
    • 1/4 cup sugar
    • 1 egg
    • 2 tsp pure vanilla
    • Cake:
    • 1 1/4 cups unsalted butter, softened
    • 6 oz cream cheese, softened
    • 2 cups sugar
    • 2 tsps vanilla extract
    • 2 T lemon juice
    • zest of one lemon, finely minced
    • 1 tsp pure almond extract
    • 5 eggs
    • 1/2 cup milk
    • 1/2 tsp salt
    • 1 T baking powder
    • 3 cups flour
    • 1/3 cup slivered almonds
    • Glaze:
    • 2 oz cream cheese, softened
    • 1 to 2 cups confectioners' sugar
    • milk or water, as required, to make a glaze


    Instructions


    1. Preheat oven to 325 degrees. Grease and flour a 10" tube pan, or a 12 cup Bundt pan, or two 9 x 5" loaf pans or three 8 x 4-inch loaf pans. Line a large baking sheet with parchment paper.
    2. For the filling, whiz the ingredients in the food processor to a make a smooth filling. Chill while assembling cake.
    3. For the cake, in a mixer, cream butter with cream cheese and sugar until smooth, scraping bowl bottom often to make sure there are no lumps. Stir in vanilla, lemon juice, zest, vanilla and almond extract, then the eggs and blend well. Blend in the milk. Fold in the dry ingredients and blend on slow speed to make a smooth batter, making sure all ingredients are combined.
    4. Spoon 2/3's of batter into prepared pan(s). Top with cream cheese filling and then drop remaining batter on top in dollops and smooth slightly, with a wet tablespoon. Sprinkle on almonds.
    5. Place on prepared baking sheet and bake until cake springs back when touched, 70-90 minutes. If it is browning and yet still does not test done, reduce temperature to 325 degrees.
    6. Meanwhile, whisk together glaze ingredients. Drizzle over cooled cake.
