    Like a cross between moist ginger muffins and packaged granola bars, these hearty, portable pastries are ideal to tuck into a backpack or briefcase.


    List of Ingredients


    • 1 egg
    • 1 1/4 cups lukewarm water
    • 1 box (14 oz) gingerbread mix
    • 3 cups reduced fat granola cereal


    Instructions


    1. Preheat the oven to 350 degrees. Coat a 12" x 8" baking pan with cooking spray.
    2. In a mixing bowl, combine the egg with the water. Beat with a fork until blended. Stir in the gingerbread mix just until moistened. Add the granola. Stir to combine.
    3. Pour into the prepared pan. Bake for about 25 minutes, or until the bars spring back when pressed with the fingertips. Cool in the pan on a rack.
