    • Lemon-Scented Honey (below)
    • 2 cups baking mix
    • 1 cup sour cream
    • 1/2 cup milk
    • 1 T poppy seeds
    • 2 tsps grated lemon peel
    • 2 tsps fresh lemon juice
    • 2 eggs


    Instructions


    1. Prepare Lemon-Scented Honey. Heat griddle or skillet; grease if necessary. Beat remaining ingredients with wire whisk or hand beater until well blended.
    2. Pour batter by scant 1/4 cupfuls onto hot griddle.
    3. Cook until edges are dry. Turn; cook until golden brown. Serve with Lemon-Scented Honey.


    Final Comments


    16 pancakes

    Lemon-Scented Honey: 1 cup honey; 1/2 lemon, thinly sliced
    Mix honey and lemon in 1 quart saucepan. Cook over medium heat until thoroughly heated. Remove lemon before serving.
