    This special enough for brunch dish is also a nearly effrotless possibility for a weekday breakfast.


    List of Ingredients


    • 8 slices (3/4" thick) Hawaiian sweet bread
    • 4 T pineapple cream cheese
    • 4 eggs
    • 1 cup milk
    • 2 T butter
    • 1/2 cup maple syrup (optional)


    Instructions


    1. Arrange the bread in four stacks so that equal size slices are on top of each other. Evenly spread 1 T of cream cheese over 1 slice in each stack, leaving a 1/4" border. Top each stack with the remaining slice, and press gently to seal.
    2. In a large shallow bowl or pie plate, combine the eggs and milk, whisking until smooth.
    3. Melt 1 T of butter in a large nonstick skillet over medium high heat. Working in batches, quickly dip both sides of each sandwich into the egg mixture (do not soak). Transfer to the skillet and cook for 2 to 3 minutes on each side, or until golden brown. Repeat with the remaining butter and sandwiches. Serve warm. If desired, serve with syrup.
