    • 2 pounds semisweet chocolate chips
    • 1/4 cup instant coffee granules
    • 1 cup unsalted butter
    • 2 cups white sugar
    • 8 eggs
    • 3 tablespoons vanilla extract
    • 1 teaspoon ground cinnamon
    • 1 teaspoon salt
    • 2 cups all-purpose flour


    Instructions


    1. Preheat the oven to 375 degrees F (190 degrees C).
    2. Place the chocolate chips and the coffee granules in a double boiler over simmering water. Cook over medium heat until the chocolate melts, stirring occasionally.
    3. Beat the butter in a bowl until fluffy. Add the sugar gradually, beating constantly and scraping sides of bowl as necessary. Beat in the eggs 2 at a time. Beat for 3 minutes or until the mixture is pale yellow.
    4. Add the vanilla, cinnamon and salt and mix well.
    5. Beat in the chocolate mixture until combined. Beat in the flour until smooth and creamy.
    6. Spoon the batter into 4 lightly greased and floured 8 inch square baking pans. Bake for 35 minutes or until the edges pull from the sides of the pans. Cool on a wire rack. Chill, covered, for 8 to 12 hours. Cut the cold brownies into bars to serve.
