    Recipe Introduction


    Iced Pumpkin Blondies are just the ticket for after-school treats for a hungry crowd. Pumpkin and brown sugar make this treat extra rich.


    List of Ingredients


    • 2 1/4 cups flour
    • 2 1/2 tsp baking powder
    • 2 tsps ground cinnamon
    • 1/4 tsp salt
    • 1 1/2 cups packed brown sugar
    • 3/4 cup butter, softened
    • 1 tsp vanilla
    • 2 large eggs
    • 1 cup pumpkin
    • Maple Icing:
    • 6 oz cream cheese, softened
    • 2 T butter, softened
    • 2 cups sifted powdered sugar
    • 1 to 2 tsp maple flavoring


    Instructions


    1. Preheat oven to 350 degrees. Grease 15 x 10-inch jelly roll pan.
    2. Combine flour, baking powder, cinnamon and salt in medium bowl. Beat sugar, butter and vanilla in large mixer bowl. Add eggs one at a time, beating well after each addition. Beat in pumpkin. Gradually beat in flour mixture. Spread in prepared pan.
    3. Bake for 20 to 25 minutes. Cool completely in pan; spread with Maple Icing. Cut into bars.
    4. For Maple Icing: Beat cream cheese, butter, and powdered sugar in small mixer bowl until smooth. Add 1 to 2 tsp maple flavoring.


    Final Comments


    Yield: 5 dozen bars
