    Bridge Party Lemon Ice Box Pie

    Recipe Introduction


    No need to worry about meringues. This is like lemon sherbet on a stick. This is the quintessential bridge party sort of party.


    List of Ingredients


    • 1 pre baked piecrust or a graham cracker crust, 9-inch size
    • Filling:
    • 1 cup sugar
    • 6 tablespoons cornstarch
    • pinch salt
    • 2 cups water
    • 5 egg yolks
    • 3 tablespoons unsalted butter
    • 1/2 cup fresh lemon juice
    • 1/4 teaspoon citric acid
    • 1/2 teaspoon lemon oil
    • 2 teaspoons pure lemon
    • zest of one lemon, finely minced
    • Topping:
    • 1 package instant lemon pudding, prepared and chilled
    • 2 cups whipping cream
    • 1/4 cup confections sugar


    Instructions


    1. Prepare the piecrust and set aside.
    2. Preheat the oven to 350 F.
    3. For the filling, in a heavy 3-quart saucepan, combine the sugar, cornstarch, salt and water to blend, over low heat. Add in the egg yolks and heat more, whisking all the while. Bring to a gentle bubble, and let thicken, about 4-5 minutes. Remove the pan from the heat and ad in the butter and lemon juice, zest, and oil, and citric acid. Pour the filling into the piecrust and chill 20 minutes.
    4. Meanwhile, prepare the pudding and chill 15 minutes. Then whip the whipping cream with confectioners sugar until stiff peaks form. Fold pudding into whipped cream and then mound it on the lemon pie filling. Chill at least an hour before serving.
