    • Cake:
    • 2 2/3 cups unsifted cake flour
    • 3 tsp baking powder
    • 2 tsp ground cinnamon
    • 1/2 tsp ground nutmeg
    • 1/2 tsp salt
    • 1/4 tsp ground cloves
    • 1 1/2 cups granulated sugar
    • 1/2 (1 stick) butter, softened
    • 2 large eggs
    • 1 1/4 cups milk
    • 2 tsp vanilla extract
    • Frosting:
    • 1 (8 oz) pkg cream cheese, softened
    • 1/4 cup (1/2 stick) butter, softened
    • 2 tsp vanilla extract
    • 1 (1-lb) box confectioners' sugar
    • 1/2 to 1 T milk, optional
    • 3/4 cup chopped walnuts


    Instructions


    1. Prepare cake: Preheat oven to 350 degrees. Generously grease and flour two 9" round baking pans.
    2. In medium bowl, stir together flour, baking powder, cinnamon, nutmeg, salt and cloves.
    3. In large bowl, with electric mixer on high speed, beat together sugar, butter, and eggs until light and fluffy. Add flour mixture, milk and vanilla; beat 1 minute longer.
    4. Transfer mixture to prepared pans and bake until a cake tester inserted into the center comes out clean - about 30 minutes. Cool in pans 5 minutes; loosen edges and invert onto wire rack to cool completely.
    5. Meanwhile, prepare frosting: In medium bowl beat cream cheese, butter, and vanilla until fluffy. Beat in confectioner's sugar, adding milk if necessary to make spreadable consistency.
    6. Fill and frost cake on serving plat. Press walnuts into frosting on side and along outer edge of top of cake.

    No time to bake on Father's Day? Don't worry - the layers for our delicious spice cake may be made ahead of time, cooled completely, wrapped well, and frozen. It's easiest to frost the cake while it is still frozen. Leave the frosted cake at room temperature to thaw for 1 1/2 hours before serving; once thawed, store it in the refrigerator until serving time.
