    Italian Love Cake


    List of Ingredients


    • 1 box chocolate cake mix
    • 3 eggs
    • 1/3 cup vegetable oil
    • 4 cups ricotta cheese, drained*
    • 1 cup sugar
    • 1 tsp vanilla
    • 1 pkg instant chocolate pudding
    • 1 (16 oz) container whipped topping


    Instructions


    1. Preheat oven to 350 degrees. Grease and flour 13" x 9" x 2" cake pan.
    2. Prepare cake as per package instructions using 3 eggs and 1/3 cup oil; pour into prepared pan and set aside.
    3. Combine ricotta cheese, sugar and vanilla in large mixing bowl; mix until thoroughly combined.
    4. Drop in large spoonfuls over cake batter. Swirl decoratively through the batter with butter knife. Bake for 1 hour. Remove from oven; cool down.
    5. Meanwhile, combine pudding mix and whipped topping; beat by hand until smooth, about 3 to 4 minutes. Frost cake when totally cool.
    6. Refrigerate 1 hour before serving.


    Final Comments


    *To drain ricotta cheese, wrap in double layer of cheesecloth. Place in colander and weigh down with few cans. Allow to drain over bowl in refrigerator for 1 hour.
