    Recipe Introduction


    An elegant dessert that is creamy and piquant at the same time. For a lighter filling, you can whip the egg whites separately and fold into the filling but it is not necessary. Pasteurized eggs make this a worry free dessert.


    List of Ingredients


    • Pie Crust :
    • 2 cups all-purpose flour
    • 1/2 cup unsalted butter
    • 2 tablespoons sugar
    • 1/8 teaspoon salt
    • 2 egg yolks
    • Filling:
    • 4 eggs
    • 1 - 14 ounce can sweetened condensed milk
    • 4 tablespoons cream cheese
    • Grated zest and juice of 3 limes
    • Topping:
    • 1 1/4 cups whipping cream
    • 2 tablespoons confectioners' sugar
    • Lime slices and zest shreds, garnish


    Instructions


    1. Line a baking sheet with parchment paper. In a food processor, add the flour, sugar and salt and combine briefly. Add in the butter and pulse to break up the butter to make a gravelly mixture. Add in the egg yolks and process until dough holds together, 1-2 minutes. Press or roll out the pastry on a floured work surface and fit into tart pan. Chill 30 minutes.
    2. For the filling, in a mixer bowl, blend the eggs, condensed milk, cream cheese, lime juice and zest well.
    3. Preheat the oven to 400 degrees F. Weigh the tart shell down by putting parchment paper on it and weighing that down with pie weights or beans. Bake the tart shell 15 minutes. Cool to room temperature and then spoon in the filling.
    4. Lower the temperature to 325 degrees F and bake at 325 F until the filling is just set, about 25-30 minutes. Refrigerate and then to serve, garnish with freshly whipped cream and confectioners' sugar, lime slices and zest.
