    Mocha Chocolate Chip Cake

    List of Ingredients


    • 1/2 cup hot strong brewed coffee
    • 1/4 cup finely ground coffee
    • 2 T instant coffee granules
    • 2 cups flour
    • 2 tsp baking powder
    • 2 tsp ground cinnamon
    • 1/4 tsp salt
    • 1 cup vegetable oil
    • 1 3/4 cups sugar
    • 3 eggs
    • 2 tsps vanilla
    • 1/2 cup semisweet chocolate chips


    Instructions


    1. Preheat oven to 350 degrees. Line a 9x5-inch metal loaf pan with greased, parchment paper.
    2. In a bowl, combine brewed coffee, finely ground coffee and instant coffee, stirring well. Set aside to cool.
    3. In a medium bowl, combine flour, baking powder, cinnamon, and salt.
    4. In a large bowl, using electric mixer, beat oil, sugar, and eggs until smooth. Add cooled coffee mixture and vanilla, beating well. Add flour mixture and beat on medium-high speed for 10 seconds, just until blended.
    5. Pour batter into prepared pan. Sprinkle chocolate chips over top, lightly pressing some of the chips into the batter. Bake for 65 to 70 minutes.
    6. Let cool in pan on rack for 15 minutes. Remove cake from pan and let cool completely on rack.
