    Old-Fashioned Sugar Cake Recipe Rating:

    This simple-to-prepare cake is great served plain or topped with fresh fruit.



    List of Ingredients


    • 2 cups plus 2 tablespoons all-purpose flour
    • 1 1/2 cups granulated sugar
    • 4 teaspoons baking powder
    • 3/4 teaspoon salt
    • 1/2 cup solid vegetable shortening, softened
    • 1 cup milk
    • 1 1/4 teaspoons vanilla extract
    • 4 large egg whites
    • 1 tablespoon superfine sugar


    Instructions


    1. Preheat oven to 350F. Grease a 10-inch cast-iron skillet, 10-inch casserole, or a 10-inch round cake pan. Dust with flour and tap out excess.
    2. Mix together flour, sugar, baking powder, and salt.
    3. Beat together shortening, milk, and vanilla at medium speed. Gradually beat in flour mixture at low speed; beat for 2 minutes.
    4. Beat in egg whites. Pour batter into prepared pan.
    5. Bake cake until a toothpick inserted in center comes out clean, 40 to 45 minutes. Transfer pan to a wire rack to cool slightly.
    6. Turn cake out onto rack. Sprinkle top of cake with superfine sugar. Serve warm.
