    Peanut-Butter Fudge Cake

    List of Ingredients


    • 2 cups all-purpose flour
    • 2 cups sugar
    • 1 tsp baking soda
    • 1 cup butter
    • 1/4 cup cocoa
    • 1 cup water
    • 1/2 cup buttermilk
    • 2 large eggs, lightly beaten
    • 1 tsp vanilla
    • 1 1/2 cups creamy peanut butter
    • Chocolate Frosting (recipe follows)


    Instructions


    1. Preheat oven to 350 degrees. Combine flour, sugar and baking soda in a large mixing bowl; set aside.
    2. Melt butter in a heavy saucepan; stir in cocoa. Add water, buttermilk and eggs, stirring well.
    3. Cook over medium heat, stirring constantly until mixture boils. Add to flour mixture; stir until smooth. Stir in vanilla. Pour batter into a greased, floured 13x9-inch baking pan.
    4. Bake for 20 to 25 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes on a wire rack. Spread peanut butter on warm cake. Cool completely for 30 minutes. Then spread Chocolate Frosting on top; cut into squares.

    Chocolate Frosting

    1 lb powdered sugar, sifted; 1/2 cup butter; 1/3 cup buttermilk; 1/4 cup cocoa; 1 tsp vanilla extract

    Put powdered sugar in a large bowl. Bring butter, buttermilk and cocoa to a boil in a saucepan over medium heat; stir constantly. Pour cocoa mix over sugar, stirring until smooth. Mix in vanilla.

    *Be creative with chocolate icing. This creamy topping isn't just for traditional cakes and cupcakes. Spread chocolate frosting between two graham crackers or shortbread cookies for a sweet sandwich-a small fix for a late-night sweet tooth. Or dip raspberries, strawberries, and cherries into frosting for a quick and easy dessert.
